Some of the tastiest and most rewarding recipes are slightly unusual ones that you can get quite unexpected results. often the biggest challenge is getting the confidence to have a go!

We have some great game avaialable in Australia and our offal is some of the freshest and cheapest in the world. Australia has the best supply of premium quality fesh lamb offal which could be considered in the same echelon as veal offal which is reverred in European cooking.
